Plastic sheeting
You will need a vapor barrier to prevent hot air coming from the house to condensate on the cold tin roof. You can use plastic sheeting for for shielding the roof. You can use nails to fix the plastic drapes. Use a knife to cut the excess of the plastic sheeting.
Installing a new tin roof
You can use the same tin sheets as before. Try to install them as they were before. use tin nails to hammer the tin roof into the plywood.
Inside structure
You can insulate the roof even more, by adding some fiberglass protection. Fill the spaces between the studs. Drape a plastic sheeting over the walls and hammer it in place. You can then cover the roof’s interior with plywood sheets. This will surely reduce the condensation.
